TUNA

Tuna, an ocean-dwelling, migratory fish in the Scombridae family, mostly in the Thunnus genus, are found in temperate waters throughout the world. They are by far the most popular canned fish in America.

Tuna is available in three pack styles: chunk, solid and flake. The most popular is chunk: the fish is broken into bite-size pieces, each retaining the original muscle structure. The solid style consists of solid fillets of tuna, the percentage of free flakes in the pack not exceeding 18%. Flake tuna is an inferior pack that contains bits and pieces of the flesh.

Tuna is most often either packed in oil or water. Mitsui Foods was the first US supplier of tuna to pack tuna in water.

The great majority of canned, commercially available tuna are from four species: albacore, tongol, yellowfin and skipjack.

Albacore, the aristocrat of the tuna family, is the only species which can be labeled "white" tuna. (All other species of tuna are "light" tuna). Albacore is creamy white in color, the flesh is firm and ideal for solid pack. This variety is a perfect choice for white tablecloth restaurants or upscale sandwich shops.

Tongol are small, light-colored, soft-fleshed tuna found in the Gulf of Siam. Tongol is a premium-quality, light meat tuna. Its flesh is so light that it is sometimes mistaken for albacore. Tongol meat has a subtle, sweet taste.

Another premium-quality light meat tuna, Yellowfin, are a large, dark-fleshed tuna. The color varies with the size of the fish—the larger the fish, the darker its meat. The texture of its flesh is softer than that of albacore, but firmer than skipjack. Yellowfin taste is stronger than albacore but milder than skipjack.

Skipjack is the smallest of the major light tunas. Its flesh is dark in color, softer in texture, but stronger in flavor than yellowfin. Skipjack is the highest volume selling species of tuna. It is also the least expensive.

Tuna is a good source of selenium, niacin, vitamin B, magnesium and omega-3 fatty acids. It is also low in fat, but high in protein.

Tuna is used in salads, sandwiches, garden salads, casseroles, tacos and as a pizza topping.
