Snails, the shelled mollusks of the gastropod class, are the land-based cousins of clams and oysters. However, unlike these bivalves, snails are univalves.
There are two basic types of snail: the Helix and the Achatine. The Helix, or European land snail, is distinguished by spiral and circular shells. The Achatine, originated in Asia, thrives in swamps and has an oversize pedicule (foot) that sometimes prevents it from fitting into its shell.
Snail meat is savory in taste and very tender. Helix varieties are plumper and more tender than Achatines.
Snail meat is a source of protein, a variety of minerals and vitamin C.
Snails are most often served as escargot. Escargots are traditionally prepared in the Burgundian fashion, served in their shells with a garlic/butter/herb/wine mixture. A pincher is used to hold the shell while a tiny fork pries out the beautifully seasoned morsel.

Before canning, the snails are prepared in the traditional manner, including simmering in a court bouillon of spices, herbs and vegetables.
