PEPPERCORNS

Peppercorns grow in grapelike clusters on the pepper plant (Piper nigrum), a vine found in India, Indonesia, Malaysia, Africa and Brazil. The world's most popular spice is pepper-ground, dried peppercorns.

Depending on the maturity of the berry at the time of picking, and subsequent processing, peppercorns are typically produced as either green, black or white. Both black and white peppercorns are the result of the berry drying process. Green peppercorns are the young, soft berries of the pepper tree. Usually packed in brine, they have a fresh flavor, pungent aroma, and are deep green in color.

Green peppercorns add zest to fish, chicken and pork dishes. They are also frequently used in dressings, cheeses, pates, sauces, soups and stir-fry dishes.
