
Pasta is made from a mixture of semolina flour, water and, sometimes, milk or eggs. (Although most pastas are made solely from semolina and water, noodles also include egg.) Semolina flour is ground from the heart of hard durum wheat. Durum wheat yields a low-starch and high-protein flour. As a result, semolina is more easily digested than all-purpose flour.
Pastas come in a wide variety of shapes, sizes, flavors and colors. Pastas are flavored and colored by adding dried vegetables (red tomatoes, green spinach, etc.) to the semolina.
