OYSTERS

Oysters are bivalve mollusks that have rough, grey, irregular shells. They are found worldwide in warm coastal water sea-beds. True oysters are any of a variety of edible bivalves belonging to the Ostreidae family. Varying in size and color from light beige to grey, they are tender in texture and slightly salty in taste.

Oysters are high in calcium, niacin and iron and are a good source of protein.

Whole boiled oysters are often breaded and fried, baked or roasted. They are also often included in stews, soups, dips and casseroles. Whole smoked oysters are whole boiled then smoked, resulting in a rich piquant flavor. Smoked oysters are used in the same applications as boiled: they are also likely to be served alone as hors d’oeuvres.
