 Olives are the small, oily fruit of the olive tree (Olea europaea). Although olive trees are native to the Mediterranean, they are now grown in warmer climates around the world. The many different varieties differ in size and taste, each usually identified by its distinct color. A ripe olive is a mature green olive that has been processed (soaked, rinsed, oxidized), yielding an olive black in color and without bitterness. Ripe olives have a mild, slightly salty taste. Olives are graded by sizes of which there are seven, ranging from small to super-colossal.
Spanish olives are green and relatively large. They are tart with a slight citrus taste. Spanish olives are stuffed commonly with pimientos, though often with other peppers or cheese.
Manzanilla olives, small to medium-sized, are the most popular green olives and lend themselves to a wide variety of culinary applications.
Salad olives are cracked, green olives packed with pimientos.
Kalamata olives are dark purple, almond-shaped, Greek olives. They are rich and firm.
Black Colossal olives, as their name indicates, are dark and very large. Like Kalamatas, they are Greek and have a distinctly robust flavor.
Olives, rich in healthy (unsaturated) fats and lutein, are used as ingredients in salads, sandwiches, pasta, pizza toppings and in many ethnic entrees.
