Mushrooms are the above-ground, spore-bearing caps of certain types of fungi.

Champignons (also known as button mushrooms, white mushrooms, table mushrooms) are the most commonly cultivated and consumed type of mushroom. Champignon mushrooms have a mild, earthy flavor. Straw mushrooms, grown in straw, are a smaller, long-stemmed variety. They have a musty, earthy flavor.

Mushrooms are low in calories and high in protein and fiber. They are a good source of vitamin B, potassium and minerals. They are the perfect garnish for many vegetables, meats (especially beef), egg dishes and soups. Mushrooms buttons are a popular ingredient in appetizers, casseroles and salads. Mushroom slices are a delicious ingredient in sandwiches, soups and omelets. Mushroom pieces and stems enliven sauces and pizza toppings. Straw mushrooms are common in many Asian entrees and stir-fry dishes.
