Mandarins belong to Citrus reticulata class of oranges. Mandarins are small, with thin, easy-to-peel skins. Unlike most common oranges, mandarins are practically seedless.
There are several varieties of mandarins. The one best suited for canning is the Satsuma. The Satsuma is darker, richer in color, and has a slightly more tart flavor than the other varieties of mandarin oranges.
