CRABMEAT

Crabs are ten-legged crustaceans with sweet, delicious meat. There are thousands of varieties of crabs. Crab meat is a good source of selenium and magnesium.

Crab meat is classified as either "lump" or "fancy." Color is often specified as white or pink.

Lump is an upscale pack of crab meat containing whole or broken pieces of lump meat hand-picked from the sides and swim-fin muscle of the crab where the legs are attached. Lump crabmeat is great for use in salads and crab meat cocktail.

Fancy, also called "fancy white," is a pack of flaky, white body meat. It is good for use in salads, crab cakes, dips, hors d’oeuvres and casseroles.

Claw meat is strong in taste and a bit stringy in texture. The meat from the crab's claw is darker than the white meat from the body. Pink crab meat is the mixture of dark claw meat and white meat (from the crab's sides).
