COCONUT

Coconut milk is created by shredding and straining coconut meat with steaming water. The degree of thickness (and fat) is determined by the amount of water added to the mix. Thicker coconut milk is often referred to as "coconut cream" (not to be confused with "cream of coconut").

White in color and sweet in taste, coconut milk is a staple in Asian and Caribbean cooking. It is also used as the base in Thai curries, as well as an ingredient in ice cream and other desserts.

Cream of coconut is a homogenized mixture of coconut, sugar, water and stabilizers. The blend is thick and very sweet.

Cream of coconut is featured in piña coladas and other cocktails. It is also used in cakes and other baked goods.
