Capers are the small flowering buds of the low-growing shrub, Capparis spinosa, native to the Mediterranean and parts of Asia. The smallest capers, picked very young, are called nonpareille capers. Capote capers are larger than nonpareilles.
Capers generally have a pungent flavor. They are often used as a seasoning or garnish or to add snap to sauces.
