Asparagus is a vegetable of the lily family. Green, garden asparagus is the most widely-known variety. White asparagus is grown under mounds of soil, the lack of sunlight preventing it from producing chlorophyll. The stalks of white asparagus tend to be thicker and smoother than the green variety.
Asparagus is an extremely nutritious vegetable, rich in vitamin A, B, and C, and a good source of iron, potassium, fiber, folic acid and calcium. Asparagus spears are often served as a side dish with lemon or butter, or covered in any of a wide variety of sauces.
