 Artichokes are the large, edible flower buds of a plant in the thistle family. The globe artichoke is by far the most widely consumed type of artichoke in the world today.
Artichokes are rich in vitamin A, a good source of potassium and phosphorus, and delightful in a wide variety of dishes. They can be prepared and served cold in salads, in dips or as hors d'oeuvres. Or they can be prepared and served hot as appetizers: the quarters can be battered and deep-fried, the hearts can be stuffed with crab meat, garlic, cheese, breadcrumbs, etc. Artichokes are also delicious in casseroles, sauces and as pizza toppings. Artichoke bottoms make unique bases to hold poached eggs, pates, mousses and other toppings.
