ANCHOVIES

Anchovies are small, slender, saltwater fish of the Engraulidae family. They are most often found in temperate waters.

The curing of anchovies yields a rather strong, salty taste. Anchovy fillets are typically packed flat with oil in tins or cans. Rolled fillets are fillets that have been rolled around capers and packed with olive oil.

Anchovies are often used in a variety of pasta sauces (for instance, puttanesca) and are often featured in Mediterranean cooking. Anchovy fillets are used in appetizers, salads (particularly Caesar salads), salad dressings and as pizza toppings. Rolled fillets are popularly served as hors d’oeuvres or in antipastos.
